Bruschetta
Olives bring additional flavor and contrast to this recipe. This tomato mixture is great for entertaining, mix up a batch for your next tapas night!
What you need
8 ripe plum tomatoes
1/2 red onion
1/3 c of sliced black olives
2 tbsp of red wine vinegar
1 tsp sugar
2-3 tbsp olive oil
1 loaf French bread
Parsley
Salt and pepper

Quarter the tomatoes, remove seeds, dice and put into a mixing bowl
Finely chop your onion and add to mixing bowl
Add the sliced black olives, red wine vinegar, and sugar to the tomato mixture
Gently stir the ingredients
Chill the mixture for an hour before serving
Slice your French bread and place on a serving plate
Spoon the mixed ingredients, covering each sliced piece of bread
Sprinkle with parsley
