This is a great recipe to make use of leftovers. Chicken quesadillas are easy to make and enjoyable, sounds like a kid approved dinner!
What you need
4 Flour Tortillas
½ c cheddar cheese
½ c monterey jack cheese
10 oz. cooked chicken breast, small diced
1 med. tomato, seeded and cubed
4 stalks green onion, chopped
Lay two tortillas on the counter, sprinkle with the cheeses, chicken, diced tomatoes, green onions and top with the remaining tortillas.
In a skillet, heat one tablespoon of oil. Place the stacked tortillas in the hot skillet.
Cook for 2-3 mins on each side or until golden brown, and cheese has melted. Repeat.
Cut into wedges and serve with sour cream, salsa and or guacamole.
