Couscous Salad Enjoy a side of couscous with your dinner for a light flavorful addition to your plate. It's simple to make and works as a great alternative to rice.
What you need
• In a large glass mixing bowl, add 1 box of couscous • Pour 1 ¼ c of boiling water over the couscous and stir gently • Cover the bowl with plastic wrap and allow the couscous to steam for about 5 mins. Set aside • Thinly slice the scallions, finely chop the parsley, peel, and chuck the cucumber, and cut the cherry tomatoes in half • Add ingredients to the couscous, and stir • Add 4 tsp olive oil and lemon juice. Season with salt and pepper to taste • Refrigerate for 1 hour before serving
