Method

• Pre-heat oven to 375°F. • In an electric mixer, mix together room temperature butter and sugars. Add peanut butter. Slowly add flour and one egg. Repeat until all three eggs and all flour have been added. • Add the baking soda and vanilla and mix until dough is well incorporated. • Use an ice cream scoop to measure out large balls of cookie dough onto a baking sheet lined with parchment paper. Once all the dough has been scooped, let set in the refrigerator for an hour Bake for 8-10 minutes or until golden brown. Allow the cookies to cool. • To prepare the filling, beat together room temperature butter and confectioners sugar. Add peanut butter, cream, and vanilla and mix until well incorporated. Set aside. • Once the cookies have cooled, spread a dollop of filling onto the bottom of one cookie and top with another cookie to make a sandwich. Repeat until all have been used.
